The general rule of thumb with CS is that if it doesn’t say the steel, it is likely AUS8. Will check the old catalogs when I get a chance.

ETA: Looks like they first appear in 2001, and are indeed AUS8, until 2006. From 2007 to 2020 they are listed as VG-1, and then in 2021 they change to AUS10. They have also been offered in 3V. Pics that I can find of VG-1 models are marked "VG-1 Stainless" so I would have to say if they are unmarked, they are AUS8.

The CS site has a catalog archive under About Us. There are a few gaps but is a great resource.

IDK the steel , but the old Japan made were generally very well constructed and finished .
