Both sharpen well and retain a good edge well. Knives with VG-10 typically are cheaper than S30V. S30V seems to retain its edge a little longer, but not substantially more.
VG-10 gets sharp for me fast! S30v not as fast but definitely holds it's edge longer than VG-10. Both were Spyderco's. Dragonfly in VG-10, while Sage 1 in S30v
In my experience, VG10 will take a screaming edge way quicker than s30v. s30v will lose the razor edge pretty quick, but will stay working sharp longer than VG10. VG10 is some sweet stuff though, my FFG endura seems like it could be used for surgery.
I have found that both are excellent steels for any EDC knife. Plenty of info charts can be found online detailing the exact makeup of the steels, if you want to understand why they work the way they do.
VG-10 is Japanese steel and thus you will only see it on the Japan made Spydies. You will see S30V on the American and Taichung Spydies. S30V is a bit pricier and should have a bit better edge retention but both are excellent user steels.
