Yeah, I discovered phone book paper a few months ago myself. I love it since it's free, and there's thousands of pages in there. Not to mention it's just the best paper to test with since it's so thin. Mine usually comes in right around .002"
It's interesting to see how closely my edges off of a 1K water stone and leather strop match yours off of a 6000 grit abrasive. It makes me think that perhaps the paper isn't really the best for testing how sharp an edge is though since my 1K results so closely resemble your 6K results, but I bet there's a lot that the paper shows you that the video doesn't.
How easy is it for you to fold the paper over at the back and slice into the rounded section? I can manage it with my sharpest knives, but I have to make the cut rather fast.
