Here is a Village Blacksmith brand Butcher Knife that I got a few years back.

No kidding I have the exact same one I believe!! It's got a nice lean grind and sharpens like a dream:thumbup: Thats all I know about it, but you have peaked my interest in it again. Maybe I'll try and do some research on it for the both of us:D
 
Didn't think anyone noticed this post of mine LOL. Yes, it does sharpen easy, and that is an understatement to say the least.
