Visiting Japan - Where are the best villages/cities to visit blacksmiths?

Hi Guys,

I will be visiting Japan 7-22/12 and I'd like to visit 4-5 centres famous for blade-making (knives, not katanas). I'm thinking of Echizen, Seki villages, Toyko and Kyoto. I'd also like to film a process of blademaking.
Any particular places you would recommend?
