Waaaay OT - Good Chili Recipe?

Ok guys - I am in need of a great Chili Recipe. Cook-Off at work and I really want to blow their socks off. And given that this is minnesota - the land where pepper is an exotic spice - it does not have to be nuclear hot! But I do like it with some HEAT! :D

Any ideas? I am sure that someone has a great one. Help! :)

My aunt loves chili and has done a couple of those recipes and they have been great. Can't say though which I have tried.

i dont normally tell my secrets-

1lb lean burger-cook in steak sauce like worstishire sauce
1/2 pound sweet sausage- chopped small ,cooked
add,1 jar of spagehti sauce,fresh garlic,hot pepper diced,small onion,2 bell peppers and packet of chili spice (mcormac or such)

always cook the day before-chilli gets better with age
 

Mine is Vodo chicken chili. This is the one that I used last year - it won so I needed a new one.

Black and Chili beans (from cans). Mesquite grill the chicken and make sure it has the skin on - gives it better taste -(this is a guys meal!) Saute some chilies of choice in butter or olive oil. Bring the beans, chilies, and some water to a boil. I also like to add some curry., more garlic, pepper, Louisiana Hot sauce etc... and let her cook for a bit. The add the chicken and cook some more for about 15-20 min.

Have some sour cream, rice, corn - whatever on the side. And you have some fine eats!

And all this from a guy in the upper midwest!

I don't think anyone wants my recipe...it gave my wife an EXPLOSIVE rear end and left her in so much pain she wanted to go to the hospital...It was so hot, it burned twice.....
 
As I said, my wife makes KILLER chili, this is what she typed up for me:

1 lb ground beef or cut up steak
1 large or 2 med onions, chopped
½ tsp. salt & pepper
1 large can kidney beans
1 med. (15 oz.) can black beans
1 med. can navy beans
2 med. cans chili beans, spiced w/ jalapeño or chipotle
1 sm. can tomato paste
1 med. can diced tomatoes
1 tsp chili powder
1 tsp cayenne or other spice like chipotle
1 tsp Worcestershire sauce
½ tsp thyme

Cook until done: meat, onions, and salt & pepper. Remove from
Heat, add all other ingredients, and stir well. Let simmer for
at least 1 hour. I suggest draining kidney beans, black beans, and any other dark beans, but including in the chili, sauce from navy and chili beans.
This is not a hard and fast recipe – be creative with different beans, spices, and other ingredients, like chopped jalapeño or habanero.


I know she does some little extras, but it's all beyond me. My domain is the grill.
