Some steels prevent rust from water ue better than others. I was wondering if Titanium is one of these. If not, what is a good choice for a knife that will see a lot of water action? Also, what steels are good in the water?

Titanium is not the best choice in terms of cutting actions but will be free of corrosion.
Stellite 6K performes better with acceptable cutting edge. But it is hard to work with.
Stainless steelgrades like 440c or ATS 34 do ok, when properly heat treatet. tempering annyhow, in the low range around 390°F-450°F and cryo after quench and inbetween. But you will have to keep an eye on it in seawater jobs and while storing.
lot a fun roman
