Water Stone Sharpening Question(Burr creation)

I currently have a 400 grit, 1,000 grit, 2,000 grit, and 8,000 grit stone collection. I also have a leather strop. My question is about burr creation. I know when starting on a 400 or 1000 grit, you want to form a burr on the other side of the edge. One that you can feel. Then, you remove it by sharpening the other side. Now, when you move to a higher grit stone, do you want to keep creating burrs, then removing it? Or are you just polishing and shouldn't be looking for that burr?
What I've been doing is creating a burr and removing it initially, then each higher grit stone, doing more polishing, until I finally strop. Am I doing it wrong? Just wondering, as there's not much info out there, unless you know how to read Japanese.

Jon at Japanese Knife Imports, has a great playlist of videos covering all things
about Sharpening.
this one covers Burrs.

I'd recommend going thru the entire list more than once, tons of info.

You should be forming a burr on each side, on each stone. Some people will go back and do a few polishing strokes after removing the burr on the final stone, here you wouldn't want to, obviously. Also on a touchup, or quick honing, you might try to avoid burr formation.

But if you're not forming a burr each time, you're not reaching the apex, so you're not having any effect on the knifes sharpness, just polishing the bevels.

I have read two trains of thoughts about burr formation. Some say to only form a burr and then remove it on your first stone and then on the following stones to not form a burr. Some say form a burr and remove it on each stone used in the progression. I have good results with only forming and removing a burr on the first stone used which is usually my 1k.As I progress through my stones,I try not to form a burr but if I do,I want the burr to be smaller and smaller throughout my stones.I strop on all my stones throughout the progression.
