Waterstone Help

Wanted to get some advice on waterstones guys.
Never used them, but there seems to be a lotta guys using them with great results.
Have been lookin at the Naniwa Super Stones & it was suggested that I get 220,1000,5000 grits.
Like the fact that these stones don't have to be soaked and have good reviews/wear quality.
My knives are pocket knives & hunting knives--Esee,Buck,Cold Steel 1095 carbon variety.

I have these stones. I think theyre great my lowest grit is the 1000 though so i need to first establish clean bevels with something that can remove a bit of metal like a silicon carbide stone. Then the 1000 starts the polishing process. Its mirrored after 5000 also a very quick run on the 5000 maintains the edge for me. If i bought them again though id avoid the ones that come with a plastic base and just get the stone by itself.
 
Just remember that they wear quick, and need lapping, done with either sandpaper on a piece of glass or a coarse diamond stone. But I see the Japanese guys who go around their town sharpening kitchen knives with really dished stones that work just fine for them.
