Hi guys I am relatively new to knives. When I sharpen my knives on a diamond plate I get a perfect conventional edge on my knives. But when I sharpen my knives on one of my waterstones some of my knifes end up with a convex edge. What is going on here; why are my knives getting a convex edge?

Natural variation in angle control, it will be a factor whenever hand sharpening.
My experience is opposite of yours, I feel I can hold a straighter angle on water stones or natural stones better than I can with my diamond hones. I just can't get the same level of edge with most other stones so I stick with my diamonds.
