It's refering to Emerson's Wave method of opening. Check out the pictures here. The hook snags the inside of your pocket, and the blade opens itself.
The Wave is an Emerson patent. So far only Spyderco has legally licenced/collaberated the Wave. However, some people modifiy their own knives to wave, add a zip tie to the opening hole, etc and refer to it as "waving". Some knives, while not exactly "waves" can work this way, like the Cold Steel Ti-Lite.
