I have been eyeing this elegant knife for a while, however the chisel grind for me is a hard pass. I am left-handed and the asymmetric appearance of the chisel grind to me ruins the aesthetic of the knife. I notice that the version with green micarta is listed by sellers in Canada as having what is alternatively called a "V grind" or a "flat grind". Is this accurate and is the green micarta the only version of this knife with a flat grind?

Yes, the first run had a chisel grind but the newest releases have a traditional V grind. That includes black Ti/green G10 and black Ti/twill CF, not sure if there are other variations.

If you check the BladeHQ listing for each, it will note the grind:

That's really cool and responsive of them, I know the designer had his reasons for going chisel grind but it really was a recipe for a niche knife, when the design is just awesome for anyone

I wonder why the designer chose a chisel grind?

LOL I had to look up Emerson Fittipaldi...still not sure what your point was.
Chisel point ... Emerson ... Fittipaldi ... there's a madness to my method!
