If the Cabela's knife is the one I'm thinking of, that would be the stag handled model with a blade made from an old sawmill's saw blade. Those old sawmill blades used to be made from L-6 . L-6 is one seriously tough steel that makes for a serious use blade.
The Western Bowie has a Roesewood handle and 440-A steel in the blade, IIRC.
My choice would be clear here. Hello? Cabela's?
