I'm currently pondering which knives I should add to my holiday watchlist. I've heard a lot of good things about wharncliffe blades and am a fan of the santoku style kitchen knives that I have available. They're easy to sharpen, they cut well, and they just look really nice aesthetically in my eyes. The only real downside is how broad the tip is, but after doing some research, it seems that wharncliffe profiles eliminate this drawback by extending the taper to encompass the entire spine of the blade. It would seem that these knives have a very slim tip though and could break if subjected to enough stress.
A reverse tanto seems to be a good compromise between a wharncliffe and a sheepsfoot based on appearance alone which is why I'm currently considering a WeKnife 620. The reverse tanto design and slight curvature of the edge addresses both of the concerns I had regarding the wharncliffe design in tip strength (due to how acute the tip would become) and dulling the tip (due to the completely straight geometry of the edge which would result in tip contact far more than a knife with a belly).
If I'm wrong in any of my assumptions, an explanation as to why it's wrong would be appreciated. I'm also, obviously, looking for any other suggestions for a nice-looking, good quality, stainless steel folder (M390 has treated me very well so far).
