What angle on a Global G 12 meatcleaver

As stated, what angle to put on a friends. G12 meatcleaver
I found some aite atating a 15% angle(yes.... Percent, not degrees!!)

My EdgePro will be used to put a new edge on, but 15 degrees seems like a very steep/fine angle for the use of a cleaver!!

I think I see what they did there.

15% of 90 Degrees.

15/90 = 0.16 = 16 degrees per side = 32 degree inclusive angle. This is not unreasonable for a global.
 
Timbit - good that you calc this out to 16* but I think Global meant 15* not %. it would be no fun to sharpen exactly at 20%.

because of the use of the cleaver I went with an 18 degree on both sides, to make it a bit more stout.

the thing is truly sharp now, but I dont really wanna reprofile this one every 2 months

For a household cleaver the 18 per side should be fine for things like poultry and the like. Ham bones and other large bones might require a more obtuse edge but would also benefit from a heavier/thicker cleaver.
 
is it a meat cleaver or a slicing cleaver? for hacking meat and bone, 30 degrees(total) sounds good. for slicing vegetables,fruit, and deboned meat, try for less than 20.
