What are all the skinny knives?

So basically what I mean is what knife designs are out there that specifically use stock thicknesses as low as 3/64", or even 1 mm? Filet knives come to mind. Anything else? And also, what designs may not have been done in such thickness that, in your opinions, would excel at that super skinny level?
