What are your thoughts on converting Hollow saber or flat ground knives to convex...

What edge profile is best to convert to convex and best methods to do it.All opinions welcome.....(I converted schrade sharpfinger into convex blade with some stones sandpaper and leather strop and was surprised at how sharp it got....hair splitting sharp).
 
I think that you are just talking about the Edge profile, right? You aren't convexing the whole blade, right?

That's an easy one. They are all about the same. Knives that start out convex like Sebbenzas and Bark Rivers would theoretically be the easiest, though.

Sounds like you've got 'er figured out already.
 
For me the thicker the blade the more I tend to convex it. Axes, machetes, choppers and other thick blades really take to a convex edge but some others can benefit as well. The last few edges I converted to convex were a Becker BK-2, a Cold Steel Kukri and an Izula. I don't convert all my knives to convex and maintain some V, hollow, scandi, chisel and asymmetrical edges.

I do almost all convexing with a slack belt sander these days for speed reasons, but I have used wet/dry sandpaper and loaded strop for converting as well as maintenance.
 
It would seem to be easier to me from a full flat grind (FFG) to some version of a convex grind. If you are just changing a V edge bevel to a convex edge bevel then it does not make much difference, but it would be easy to mar the finish on the hollow saber.
 
I think you are only talking about edge bevels, so it seems to me like you have a pretty thorough grasp of the situation. Blade grind doesn't normally come into play when convexing any edge bevel.
