What axes do they use on the show Mountain Men?

No idea. Stopped watching TV 25 years ago because content programs seemed to interfere with time devoted to advertising. But if what you're talking about is Hollywood actors and scenes then likely these are real custom stage props (ie unaffordable to us).
 
I spotted a council tool in one episode. I think it was the first time the guy had ever held an axe...
 
I saw Eustice carrying a Gransfors once and I spotted a gransfors carving axe at one of his carving stations once..
 
I saw one of them using some cheap import POS. Just whatever is available at the local hardware store, I imagine.
 
Marty was sporting a new velvet cut at the beginning of the season. And new skin on his piper cub!

Eustace had some vintage and was seen with a new GB last year. And I am pretty sure I spotted a new Best Made this year. Yep can't hardly make ends meet.

The trapper in the north east was useing a new hudson bay pattern, it was either a velvet cut or a best made, can't remember for sure.

Tom is still useing vintage axes.
