I'd like to hear more about this steel. I can't seem to find more about it other than its French. What is it roughly equivalent to?

From what I've seen online, it appears to be a very average steel, heat treated around 58-59rc.

I've seen the Rockwell too, but cannot find what type of steel it equates to. I have a sneaking suspicion it is similar to AUS8.

To what i have read z60 is something like 12c27 . It is french and its mostly used in meat processing blades + hunting knives with a rockwell of 58-59 . I hope this helps
