"The CPM-S60V has a carbon content of 2.15 while the CPM-S30V has a carbon content of 1.45. This means that the S60V would hold an edge longer than the S30V. Both steels will be harder to sharpen that some steels, however, they will hold the edge for a long time."
This is, word by word, the answer I received from a KNOWN site, about my question of how to find the best folder I can get among these blade types.
If that's a fact, why knives with S30V are more expensive?
 
Edge-retention is determined by alot of different factors--
But for me, S30V is just too soft.

I've never seen it hardened above 59.

That might be because the manufacturers are using S30V on their better knives. A lot more goes into the price than just the steel.
