Well this is what Matt of ML knives uses, hope he doesn't mind me showing it here but I just thought they were a cool bunch of kitchen knives !!!!

Here is a small collection of work that I have done for my wife. We thought maybe you would all like to see these. Starting at the top is one of my custom hand forged Kitchen knives with a 7 inch blade and some very nice patina. Actually they all have very nice patina. The rest of the knives I custom made for my wife through the years. The oldest being the second one from the bottom, that is her favorite. The handle is natural aged birds eye maple. If I had to guess that knife is about ten years old. All of these knives get used on an almost daily basis, mostly for kitchen work.
