Use a sharpie and draw a line on the cutting bevel. Swipe the knife on one setting and see if you are hitting the correct angle. If the sharpie is gone, then you are on the right angle, repeat using the other stone if you didn't scrape off the sharpie with the swipe on the stone.
Make sure that you watch the video that comes with the Sharpmaker. If you don't have access to it, you can watch it online via Youtube. You also might want to search through the Maintenance, Tinkering, and Embellishment subforums, where all or most sharpening threads are placed.
