what grits do you sharpen with?

where do you stop when making a working edge, how many steps for a polished one? Looking at a mand american combo, and trying to consider how many textured leather plates to get to go with the conditioned/Cro plate

I use Uncle Toms Grits...:p Sorry bout that, been a long day already. I use the Sharpmaker and go through to the angles of the white stick. I got carried away when I first got into it and got a 6000 grit belt! Can;t tell any difference between it and 600 grit.
 
I have an Edge-Pro and it depends on what I want to do with the knife.

Most of my EDC's are polished to a mirror (using all of Ben's grit numbers and the polishing tapes.)

If the knife is used by wife to slice wet vegetables or cube semi-thawed meat for stew, then I use the 180 or 220 grit only, and a light strop to remove any remaining burr.

For knife fighting, I have a gypsy woman rub them with garlic. Sounds extreme, but I haven't been killed yet.

gypsy women are a bit hard to find here, so what other options do I have than? :D
 
On really dull or damaged edges I will sometimes start with as low as a 100 grit and occasionally finish up with a 1200. Usually though, I don't go over a 600 grit finish on my edges.

Go buy some garlic, makeup and a burqua.
 
I also don't like to go over about a 600 grit for a finished edge.
 
Usually go 300 to 600 and sometimes 1200. Sometimes leather strop, and sometimes 2000 grit mousepad for convex edges. I also try to push the envelope with an acute angle.
