What is a good stone to end with on an Edge Pro

I am going to purchase an Edge Pro. The Apex I is what I am buying (I would like the Apex 3 or 4 but will not spend that amount). The Apex I now comes with a 220 and a 400 grit stone. I am going to add the EP 1000 also.

I talked to Edge Pro and they said that it is perfectly ok to stop at the 400 grit. They also said that if I wanted to , I can go up to the 1000. They said it wasn't necessary to go above that and if I did, it could have diminishing returns. Some day when I have more money I do plan on getting the Chocera 5000 or 10000 but not now.

I will be sharpening mostly kitchen knives to mostly cut veggies and fruit (I juice daily). I also will be sharpening a few Spyderco, Buck, and Kershaw pocket knives and hunting knives. I just want my knives just as sharp as the factory edge or tad bit more. It doesn't need to be super sharp or shave ready.

I do realize the EP stones are actually rated a higher grit on the Japanese scale. So the 400 may be a 1000 grit or so and the 1000 grit may be a 2000-3000 grit stone.

So is it ok to end with the 400 grit?

Should I even buy the 1000 grit?

for kitchen knives a higher grit is fine.... do you "need" it? absolutely not... but for only $14 more, why not? LIke ben said, i wouldn't go much above that though unless you have a specific purpose. As far as your pocket knives are concerned, I would finish all of those on the 220... you'll love the edge, trust me! It will really bite into whatever its cutting, yet still pop off arm hairs. hope this helps!

How high would be good for kitchen knives?

I could also not add the 1000 EP stone and use the EP 220, EP 400, and add one Chosera?
Which Chosera would be a not to big of a jump from the EP 400?

Was just on their site and it didn't say anything about a 400 grit stone.

In the end for what you are doing the 220 and 320 (400?) would be fine for those uses.

If you are going to add another stone the EP 600 grit would be the one to get.

They don't have it listed yet but there new kits will have them in. At least the Apex I will. I confirmed this with Ben and Mark at CKTG.
I actually just bought (haven't received it yet) the Apex I (220,400) and the EP 1000. I was informed that I could go 400 then 600 but I could also get away withh 400 to 1000.
I guess I will see soon :)

If not I could always add the EP 600 when I place my order for a higher grit Chocera or Shapton

If you call Ben ask him, he'll dig a 1200 out of the box in the back and ship it to you. That will give you one heckuva finish!:p
