I am going to purchase an Edge Pro. The Apex I is what I am buying (I would like the Apex 3 or 4 but will not spend that amount). The Apex I now comes with a 220 and a 400 grit stone. I am going to add the EP 1000 also.
I talked to Edge Pro and they said that it is perfectly ok to stop at the 400 grit. They also said that if I wanted to , I can go up to the 1000. They said it wasn't necessary to go above that and if I did, it could have diminishing returns. Some day when I have more money I do plan on getting the Chocera 5000 or 10000 but not now.
I will be sharpening mostly kitchen knives to mostly cut veggies and fruit (I juice daily). I also will be sharpening a few Spyderco, Buck, and Kershaw pocket knives and hunting knives. I just want my knives just as sharp as the factory edge or tad bit more. It doesn't need to be super sharp or shave ready.
I do realize the EP stones are actually rated a higher grit on the Japanese scale. So the 400 may be a 1000 grit or so and the 1000 grit may be a 2000-3000 grit stone.
So is it ok to end with the 400 grit?
Should I even buy the 1000 grit?
