What Is A Handmade Knife?

Came across a "knifemaker" the other day who has his blades profiled by a lazer machine. He is of the view that his products are still hand made. Why do I go to the trouble of hand profiling my blades when he gets away with sellin handmade knives that are lazer cut. Where does the boundary lie. I was of the view that a handmade knife was just that. Whilst we can use a grinder we are not allowed to use jigs etc. What is the difference?
