What is G-10?

It's a fiberglass and epoxy-resin composite. It was developed to make circuit boards for military applications. It's very tough stuff.
 
From the 2002 Spyderco Catalog,

G-10: Handle material made of epoxy filled with woven glass fiber that is impervious to changes in temperature and can be tinted into many colors.
