i use the edgepro for everything regarding sharpening... it does have its limitations, mainly on smaller knives. sharpening a tiny little parker dagger i had was all but impossible, as the bevels changed each time i fliped it to a new side.
honestly, i havent seen a better system.
truly scary sharp = unusable sharp.
you can sharpen a knife to the point that it will cut hair above the skin, as in when you pass the edge across a tuft of hair, it will cut through it a 1/8" above the skin. if your skilled, you can get a knife to a level of sharpness that it will sink into skin without any weight behind it; as in if you touch the edge, i dont mean run your finger across it, i dont mean press it, i mean put the edge to flesh with 0 pressure, it will penetrate. it'll go to bone before you know whats happening, before you even feel it bite. it is literally dangerous to use. im talking 10 degree's included and below and skillfully leather honed.
HOWEVER. that kind of edge = totally worthless for daily use. it will ding out and go to shot immediately upon use on anything but marshmellows. and even marshmellows will roll it over if you get to that degree of sharpness.
