What is the best way to grind a Billhook/hawkbill knife?

Hey all - I was watching Forged in Fire the other night an they were making a Billhook knife for a first challenge. (S8: E34 - Jude Takeover / Ben Abbot). The example knife looked super cool and now I would really like to make one; but I don't exactly know the best way to grind a Billhook or hawkbill knife. IF you have any tips, tricks or best practices would you please share? I would like to do a flat grind but the hook are and tip have me wondering how best to grind this.......Thanks all for the help!

I'd do the main bevel on the flat platen, then the hook portion on a small wheel attachment, maybe in the horizontal setting... Maybe finishing up with a round or half round file.
