What Katana shape is the best? (I know it's a broad question)

Era mostly refers to the age of the blade more than the style. Even within an era there may have been many schools and styles.
I think a classic shinogi tsukuri with an inch of sori and ko-kissaki or chu-kissaki is the most popular style, and easiest to learn on if you plan on doing cutting. These styles can be found from wall hanger to user grade affordably.

If you are talking about actual era swords, then a late Murimachi sword would look really nice on the kake. Prepare to spend about what a house costs.
