What kind of bladed goodies would I expect to find at the Army Surplus store?

Depends on the store, but I would mostly expect old M7 Bayonets & maybe the current issue bayonets. Probably a good chance they will have some Ka-Bars & the Air Force Pilot's knife.
 
The best way to find out is to drop in. My favorite ANS store has a very good knife case with Benchmades and other name brands. I even bought my first quality knife there (SAK) decades ago as a teenager. But most ANS stores have more of a flea-market-like selection. One good tool you can get at an ANS is the official GI entrenchment tool (folding shovel). Far more robust than the cheap copies. Not a bad idea to keep one in the car.
 
The army surplus near me carries a small selection of Spyderco and Cold Steel knives. I've been in others that just carry cheapies. Depends on the neighborhood and what the proprietor thinks will sell.

Go give it a shot.
 
My local one has a bunch of Camillius, Benchmade, Buck and Smith and Wesson. Most are way overpriced but I was surprised to see so many BM's.
