What kind of wood?

Hi!
Old american butcher knives and similar knives - what kind of wood was used for the handles? Were some materials more common than others?
 
What era?
Knives imported to the future and fledgling US during the 1600's to early 1800's from England, Germany, and France, before the was a US Cutlery Industry?
Post circa 1839 when Dexter Russell Green River Knifeworks started?
Made by a local blacksmith? (Whatever woods were common in his/her area, and maybe horn/antler.)

European manufacturers didn't have access to the wood those in the Americas did, and vise versa.

In general, Ash, Hickory, Maple, Birch, Fruit woods (Cherry, Apple, Pear, etc) Olive Wood (in the parts of Europe that olives were grown) ... Whatever was available near the factory and cheap, is what they used.
Especially in the Americas. Very little if any lumber was imported during the colonial to Civil War eras.
