United States- buck 110
Canada- Grohmann #1 original belt knife
France- laguoile knife (any kind)
Germany- nicker messer (any kind)
Switzerland- sak (Victorinox, or Wenger)
Africa- okapi
South America- gaucho knife (any kind)
Sweden- helle knive(s)
Finland- puuko (any kind)
Spain- spanish clasp knife (any knid)
Great britain- Rodgers British clasp knife
Japan- tanto (any kind)
Philipines- balisong (any kind)

You have a pretty good list, hard to add to it, some thoughts:

Peru.- precolombian tumi.
Italy.- stilleto.
China.- leaf blade.
Scotland.- dirk
