What knife skills do you practice?

I don't really use my knives unless I'm using them for something :D You can sharpen them, or play with carving and whittling. I tend to whittle when sitting by the campfire waiting for sleep to creep up on me.
 
I am out chopping downed trees up a bit. Also baton the wood for bonfires in the winter. Carving is usually done on days I can't, or don't feel like being outside. (Very hot, severe thunderstorms) I am not sure I'd consider that practicing, but I am using my knives.
 
Sharpening, or learning to sharpen steels either than simple carbon steels. A lot of opening boxes of new knives. Surprisingly, the most I've done with a knife has been with my Victorinox Farmer, Case peanut and Gossman PSK.
 
Carve a spoon. That seems to be pretty popular.

I've done 2 spoons so far. I actually use one a lot in the kitchen for serving rice and cooking with non-stick cookware.

Yeah, I can't get my SS blades to be as sharp as the carbon ones.
