What Makes A Type Of Steel Better Than Another?

I need some advice on this as I have seen spring steels. High carbon steels. traditional asian steels and plenty of others. So what do I need to know about these and what makes some better or more pricey than others?
 
Ever step of making and processing steel affects the final product and how good it is. Starting with the ore that's used, through every single process of making the steel, including the minute differences in purity and alloying elements.

Once the steel is made, it is now further processed by the person or machines that are turning it into something. So from there, even perfect steel can become a scrap heap, or iffy steel can become something amazing.

Thats why i really love the forging process because its the case of taking crappy metal and making it into some amazing. If you ever have the money to buy tamahagane steel which i usually over a grand but its amazing
