What makes Pork taste better?

So you get a pork roast and some hickory chips to start with. Steamed in hickory and smoked with hickory then layered with some hickory smoked bacon, cause what makes pork tase better than more pork! Love a good Weber grill. That Heavy Duty makes a great grillin' tool.

That is an interesting technique. What is the liqiuid, water or apple juice or? Do you add any spices/seasoning to the liquid? How long does it take to cook a loin roast like that?
 
I used a couple leftover pie pans from blackberry cobbler. I hooked them together with a couple chopsticks. The HD was used to poke 20-30 holes in the little pans for steam penetration. The original apparatus had a rack about 2 inches above the liquid. I used water with hickory chips soaking in it. I usually get pretty crazy with the seasoning but this one just has garlic, thyme and sea salt on the roast then covered in half slices of store brand, hickory smoked bacon. Since I was roasting this one I just cooked for 20 min./lb +/-. I had all of the vents open on the bottom and the top vent was shut down to about 25% to hold the heat, smoke and steam but I opened it up all the way for a few minutes after adding wood chips directly on the coals to get them going good. This would has been a good cut to marinate in a brine for a few hours or overnight. The Weber charcoal grill makes this technique easy.
 
Mojo Criollo that is. Pronounced MO HO, it is a Cuban marinade.

Made from Bitter Orange, Lemon, Garlic, Onion, and secret stuff.

Nobody, but nobody, does pig like the Cubans and this is their secret weapon.:D

Used to buy it by the gallon down in So FL. The gallons are hard to find up here, but the 24oz bottles are around. I've seen them, Publix or Blooms IIRC. Not expensive.

Marinate overnight (I put in a big zip lock and completely cover), then smoke as usual. You'll thank me later.;);)

Also for chicken or beef. Chicken is ok, but neither my wife or I care for it with beef. Plenty of chickens and pigs in Cuba, but not much in the way of cows.

Give it a try, you'll be glad you did.:D:D
