it will take you some time by hand but it can be done with some 3m wetordry sandpaper on a soft backing like a phone book.
a belt sander works the best and is what i use when i put a convex edge on a knife for someone. i finish it off on the slotted paper wheel instead of a strop and i have one freaky sharp knife.
I've done them with a beltsander to begin and then switched over to sandpaper over leather to finish. My last one I did about 90% of the initial convexing by hand with a coarse silicone carbide benchstone and finished it off by hand on a progression of diamond stones. If you do it on a hard stone you can get very good results, you'll just have to polish the face of the blade when you're done to make it look nice.
I do my convex work on my belt grinder exclusively, starting with Trizact belts, and working down through green and white compounds on SurgiSharp leather belts.
Leather-backed sandpaper will work just fine as well, just takes a bit longer.
