I have tried various polishes (by hand) including Simichrome, Flitz, Metal Glo, etc. I have a knife with a satin, non reflective finish (Stainless), but I actually want a finish with more shine to it, yet without scratching or damaging the knife.

Any suggestions on a truly outstanding brand of polish?

You're going to need more than just polish to achieve that finish. I've never done this but I think you're going to have to use finer and finer levels of abrasives and a lot of elbow grease to go from satin to shiny.

You'll be amazed at the shine that you can achieve by using "MOTHER"S MAG & ALUMINUM POLISH" This stuff will give you that extra shine you are looking for. It may take several polishings but you will be able to tell a difference. A lot of times at night I'll be sitting in front of the TV and I'll work on a knife with this stuff and get several polishings in. Good stuff, give it a try. Your local Wal-Mart should have it in the automotive dept.

Btw, it comes in a small red and white container and is a full 5 ounces of polish. :D :D :D

If you're trying to achieve a mirror polish, TorzJohnson is right. It requires various grits of sandpaper and elbow grease.

Here's what works for me-on a factory knife I start with 400 g, then go to 600g, 800, 1000, 1200, 1500 and finish w/2000. Sand in the same direction every time-sanding back and forth on the blade will leave swirl marks... After I finish with the 2000 grit I go to a buffer and use green stainless compond and polish to a mirror finish. (I'm pretty sure that more experienced knifemakers can achieve a mirror polish in fewer steps but this one works for me so I've stuck with it.)
