I have been making jewelry out of precious metal for 20 years now, and I am getting really interested in knife making.

what type of wax or compound does one use on stag material to get that nice shine?

I have all sorts of polishing wheels and compounds such as tripoli and rouge. What about fabulustere rouge? I even have a big tumbler that I tumble items in, using various mediums and I also use steel shot combined with a high-polish chemical.

Any help would be appreciated

I buff stag with white or green bufffing compound, comes up to a high gloss if you have quality stag.

I have some red deer stag right now and it has a very white interior, makes Sambar look almost Ivory colour by comparison.

I will be cutting and offering the red deer for sale soon, lots of rounds, tines and smaller scales for folder but not too many large scales.

I use White with good results, Green wants to hang up down in the
low spots where you want it to stay dark and its hard to get out.
Sanding the high ridges to 400 to 600 really helps.

No Scratch Pink is great stuff. I quit using green on my handles cause I kept finding it in places that I didn't want it and couldnt get it out of.

A little trick to get rid of leftover compound is to wax the handle well with paste wax. The paste wax dissolves the binders in the compound and floats the dirty compound out. Even if you cannot see any excesss compound you will be surprised at the results. I use Rennaisance wax or a carnuba wax, whatever I find first.

I get satisfactory results from the standard black rouge, and like the effect it leaves in the rougher or porous spots. If any cleaning is needed WD-40 works well, and leaves a nice luster too.
I also have the Red Deer antler available, and even sizes suitable for large handles and scales.

I use Turtle Wax polishing compound. I bought it Walmart for $1.50 I think. It comes in a pretty big sized tub. It has no smell also.
