What should I tell the HT company for a tough 5160 blade?

I'm about to start some projects I'll want to send out for professional HT, since there is a great HT company near me which has a cutlery HT expert on their staff.

The blade is going to be for hard use including batoning, etc. I was thinking 55-57 HRC, but beyond that I'm not sure what to ask for.

I'll be talking with the cutlery HT specialist soon, but what do you think I should ask for to start the conversation?

Are you talking about Peters' HT by chance? They do excellent work and will steer you right. Ask for Brad Stallsmith and tell him just what you said here

You should tell them that it's 5160 and you want it tougher. Unless you already know the specifics, which you don't(neither do I), then they likely already know what to do to accomplish that. If they don't, then you don't want to send it to them.
