So I have a bunch of ni-silver rivets and want to put some bolsters on a kitchen chef's knife for my wife. Since nickel silver bar stock has gotten rare and expensive (at least where I have been looking), I'd like to substitute stainless. Which of the commonly available stainless steels will best match the color/tone of nickel silver? I know, they should all be pretty close, but it is my wife here...that gal can spot a color or tone difference from miles away. 
I'm less concerned with ease of working...I'm used to working 316l with all the marine/saltwater/boat stuff I do in my other hobby, and that stuff is tough and gummy as anything I've ever seen. Anything has got to be better...
