What stainless steel is best?

Some offer traits that are better than others, but there is usually a trade off.
What properties do you prefer?
 
... I'm well experience with carbon steel. I'm not asking about it. It will be used in a wet environment where oil may not be available.
 
Day to day EDC? Is it occasional use by an office worker or heavy use by a construction contractor?
 
I'm a big S30V fan, but you wouldn't want to use a knife in that steel as a prybar, for instance. It excels at taking a very sharp edge and holding it for a long time.

440C is a very good all-around steel.

And I too am a big proponent of carbon steel. But I live in a very dry climate. I realize that it's not for everyone.

I prefer VG10 for stainless , but that's me.

The Sandvik steels are well regarded, such as 12c27, 13c26, 14c??. Similar steels are 420HC, AEB-L, and a few others. 440C is good. I used a 440C TSEK for years. AUS-8 and even AUS-6 are also good if they are from a reputable maker like Kershaw. S30V and its relatives have exceptional wear resistance and utility edge holding.
 
H1, ZDP189, 904L, 304 will all tolerate corrosive environments with little care.

I would probably use CPM 154. Good 440C would be a good choice from someone like Randall. What I don't like about the 400 series steels is they aren't graded accurately a lot of times.

Didn't say you were partner. Just a free opinion. You want some good stainless, as Samael said, CPM-S30V will get you covered. With the right heat treat that will take an unnatural edge and hold it for a while.

To the OP, here's another vote for S30V but I'm also fond of 154cm and D2 (though not quite a true stainless).
