I looking at either getting a Fujiwara Nashiji 180mm Santoku Octagonal Handle http://www.chefknivestogo.com/funa18peocha.html or a Tojiro Hammered Carbon Santoku 165mm http://www.chefknivestogo.com/tohacana.html
I don't care about price so it doesn't matter if I end up getting the one for $215.00,I 'm thinking the knife in the first link will hold it's edge better and get sharper with it's 64 to 65 rockwell hardness,what do you guy's think.
