What Steel will hold it's edge better between these 2 Knive's.

It's a Teruyasu fujiwara, it's a very good knife with one of the best heat treatments I've experienced. It will get extremely sharp and hold it very well. Far better than the Tojiro.

I think that may be the one I may just have to purchase later tonight,although I really like the look of the Hammered blade better but I do not like the round handle on the Hammered blade as well I think the Teruyasu fujiwara is the better knife.
