What steel would you want in a fillet?

I'm looking at steel selection for a fillet design, so it's going to be thin (probably 1/16) and definitely going for a stainless. At that thickness precision ground is probably a must as well. Admiral steel has 1/16 440c in stock, and I've sent aldo an email to see if he stocks any thinner stainless materials. What are your thoughts on the best stainless as far as corrosion resistance? And if you know where I can get it post up ;)
 
I use 154cm and 0-1 in the fillet knives I make. Most of the people who use them seem to prefer the 0-1 even though it isn't stainless.
Honestly though, you won't ever notice a difference in rust resistance between the stainless' in use. As for 1/16 inch I'm pretty sure aldo has s30/35, 154cm/cpm and 440c as well
 
Looks like he has a lot of stuff in .103/.113 thickness which is closer to 7/64 or 1/8, I'm thinking that would be a little thick for the knife to have much flex? I did find the O-1 so might try that

Call and ask if that thickness includes mill scale. If it does, he will surface grind it clean for you for a very reasonable fee, and that will take a few thousandths off the total thickness. Either way, I would profile and drill the cleaned-up blade, HT it and then commence to grinding the bevels. This will reduce the likelihood of warpage on such thin stock. It will also allow you to tweak it until you have it as flexible as you want.
 
I would want a fine-grained low carbide steel at a good hardness. Something that is very easy to sharpen to a razor edge at a very acute edge angle, and very stainless. AUS8 or 12c27 would be my choices.
 
I make all my fillet knives in CPM-S35VN. The .103 stuff Aldo has will be .060 down to .030 when the distal taper is ground in. It is best to do the bevels after HT. IIRC, he has sent me .060 before ( or maybe it was .090?). Call him.
 
I just received .060 pieces of S35VN already clean. He does have other things in stock that are not on the web site. Call or email the shop. (I emailed for what is available then called to order it) NJ Steel Baron is a top notch operation and will take care of you!
 
S35VN make a really good fine cutting blade. I satin finish it with a Scotch Bright belt. With cryo, shoot for Rc60-62. If the edge is well made and stropped, it will slice like you would not believe.
 
Ok so S35VN seems like a good choice and several of you have mentioned it, I sent NJ Steel an email last night and I'm sure they will take care of whatever I need thanks for the responses!
