what technique for using a small hone on a large blade?

I'm just curious how you all sharpen or hone a large blade with a small stone or strop?

Do you do it in sections, or have the blade at a steeper angle, ie. something other than perpendicular to your hone?

A bit of both. If I'm using a small hone I often hold the knife steady and run the hone over it.

Steeper angle- NOT bevel angle.

That is how Jimmy Fikes field sharpened one in his cutting video also, with a stroke almost parallel to the edge (though he did it with an 8" diamond plate).
