Gotchya. No quention CPM-154 or 440 in oil. What about 01, I hear that's kind of a beginner steel and fairly forgiving with heat treating? How concerned should I be about flashing? If there is a fire when quenching in oil, will an ABC extinguisher do the job?
Do it where fire won't be a problem.
It's not like a french fry fire because the whole pot of oil is not that hot.
Use a large enough container to accept enough oil.
Leave headroom to accept the displacement of the knife and tongs plus extra.
Use a metal container, plastic melts, glass can shatter with heat.
Have an ABC fire extinguisher handy, but if you've ever used one - you know they are an awful mess.
Be prepared for small fires.

When vapor is hot enough, it will burn.
putting hot steel into oil can produce vapor and the red hot tang can ignite it.
So do a full dunk and do it smoothly and quickly, but not slopply
Have a metal lid handy to smoother a surface fire
