What would you recommend?

Whet Stone or a 600 grit diamond stone. Stay away from belt sharpeners as you may ruin the temper. If you want a guided system, the Lansky is really inexpensive.
 
I use a lanksy sometimes. It definitely takes a long time for me to get the first burrs because I am not good at making the secondary bevel on the grinder. I think if your geometry is funky sharpening with anything is going to be tough.
 
Get DMT Duo-sharp diamond plates. You also want to get the base to hold them ( they call it the bench stone). One fine/extra fine will do most work, and a coarse/extra coarse is a useful second stone. The 10" is by far the most useful size, but the 8" plates are also good. This is a buy once - cry once thing, as they should last a lifetime for most folks.
 
Cheap diamond sharpeners from aliexpress and make yourself a wedge in 20 degrees and one in 15 degrees. It will help you find the angle.
 
I like the Duo-Sharp diamond plates in the 10 inch size. I purchased mine 20 years ago. If they are treated with respect they will last.
The key to most sharpening failures is not the devise but the fact the user is not, maintaining the chosen angle when making passes. Find someone with a miter saw and have them cut you a set of wedges at different angles. The selection of 15 and 20 degrees will suffice in most cases.
If just starting, it's great if you can find someone who can show you what sharp is; many don't know what the possibilities are when it comes to sharp. Each knife you sharpen is different from the last one. Each edge is different and each edge has it's own possibilities.
