I am curious as to what others are using in their kitchen? My wife says we have "TOO MANY KNIVES", but its not like they cost a ton of money, and they all have a use, granted I use some more than others... I am not really brand loyal, and I LOVE CHEAP KNIVES... I have 10 ken onions, 5 of the rain/sky series and 5 of the american classic series, very similar, I want to say the steel on the american classics holds an edge better.. I also have a zhen, zelite, couple dalstrongs, and a bunch of 8" chefs knives, the one my wife uses the most is a cheap printed damscus augymer ($20, I try to keep her away from the ones that were more than $40 each)...
