The sharpest blade is a hollow ground, sharpened on one side and honed with leather or ceramic on both sides. That is what they use to use for razor blades not so long ago. But it's very thin and easy to break. In all the knives I have tested, Kershaw and Spyderco are the sharpest, Spyderco the most durable. The best steel for taking a edge and holding it, comes out of United States, Germany and the Philippines. Japan gets it's steel from the Philippines. There are countries like the Swiss made knives and even Pakinstan Steel will take a good edge, but not hold it. As a comparison, a German or American knife you may only have to sharpen every 3 weeks, a Swiss knife maybe ever week and a Pakinstan knife usually every day, if you can make it though the day with it staying sharp. Thanks, JohnR7

IMHO the sharpest blade is a properly ground chisel grind. One primary cutting bevel instead of two=1/2 the drag.........
