I've been making knives for over a year now about 50 knives. So some have been polished out and others have been acid dipped to a dark gray finish. I live in Hawaii and the humidity isnt super high but some times it rains for a few days. im just looking for the best long time finish for the customer. I do give them a copy of how to take care of High Carbon Steel Knives. The ones that Ive kept that are high polished seem to have some corrosion after some time and the acid dipped hold up a little better. They all get wax or oiled. So any new ideas?
Thanks. Doc

I personally prefer polished carbon steel, I like the patina it develops. However, where I live the air is dry year round, so rust isn't ever a problem.
