What's the best way to polish the scratches out of my gec

For my bolsters I use Case Polish, which I believe is something similar to Flitz. I haven't tried it on a blade because I love patina, but it does polish the bolsters (steel or nickel silver)on my knives really well.
 
get a cloth buffing wheel for your bench grinder and some buffing compound. that will make it shine.
 
Scratches in steel need sandpaper to remove them. Scratches in nickel silver or brass can be polished out unless deep. I start with 400 grit and go up in 200 grit increments until it looks the way I want. Then polish. I've read buffing wheels and knives can be a dangerous when used with knives. They can catch and throw a blade.
 
A picture would really help up, because the above recommendations about sandpaper and polish could both work depending on the damage.
 
Add more dings and call it stonewashed.

I like a Cape Cod cloth over all, but it won’t remove scratches.

You could always satin the bolsters with a Rust Eraser. That will take care of scratches.
